Independencia: Flavors of Northern Philippines

One of Marco Polo Plaza Cebu’s Culinary Journeys that I always look forward to is Independencia, which celebrates Philippine Independence Day by serving cuisines that molded our country’s culinary scene throughout the history.

From 2015’s favorites of our National Heroes and 2016’s the best of Luzon, Visayas and Mindanao, this 2017, Independencia will take us to the rich and flavorful dishes of the northern of the Philippines.

This is probably my favorite Independencia theme so far because many dishes represent my hometown, the Culinary Capital of the Philippines, Pampanga. The Sisig, Bistek Tagalog, Bulalo, Adobong Manok and Bringhe reminded me a lot of home and my Grandma’s cooking. There were also interesting dishes that are new to me like the Tapang Taal, Pancit Buko, and Santol Sisig.

Of course, the buffet spread is not complete without dessert, the Buko Salad is a must try, as well as the a selection of Kakanin that we enjoyed growing up.
